Even if he picks one of those, it doesn't mean that you'll get a free KVM or Xen VPS from him.

Back on topic: It would probably be a good idea for you to get some experience in the realm of shared hosting before expanding to VPS hosting. That way, you'll sorta know what to expect and how your clients might act.
